Lyndey opens this Autumn show at the misty and magical Echo point as the Three Sisters smile from below. Logan Brae Apple Orchard is the home of juicy ripe apples and after sampling the apple juice, Lyndey takes her apples and uses the classic combo of pork and apples to make pulled pork and apple slaw by an indoor open fire. She finds a world-class wagyu farm deep in the Megalong Valley, run by a Japanese master and forages for wild mushrooms in Oberon. The quaint village of Leura is the home of two beauties: Josophans, a boutique chocolate maker with delicious hand-made chocolates and the historical Everglades House where Lyndey puts that wagyu to good use with the foraged mushrooms.
